Default Best cheese smokies near Calgary

stealing this idea from the Edmonton Thread. Just moved to Calgary... best Cheese Smokies near Calgary (butchering also)?

The best ones I have had were made from the jalapeno smokie mix from CTR and adding cheese and making them myself. The next best is from Rocky’s sausage Haus, I believe he has moved to okotoks.

Rocky has hands down the best cheese smokies I have had in my life. Big hit at work when I bring them and cook them on site for the boys.

Yes I have for elk garlic sausage and moose smokies. That's the reason I do my own now!!

This year I tried Rocky's Sausage south of Calgary by the Aldersyde turnoff. Excellent product. Will definitely be going back in the future.

Default Swiss and Bacon Smokies...

Dropped some meat off for sausage yesterday at Rocky's Saugage Haus.
Should be ready right around Christmas/New Year. Got the bacon and swiss smokies!

Been getting deer done as bacon and swiss smokies by Rocky for the last couple of years. Best ones I've had.

First time Visiting Rocky's. Does he have product ready to purchase off the shelf or is it all for pre-order?
I'm no Okotoks today and will be stopping by today hopefully.

I’m not sure about his new store, I haven’t been there, but his old store had a front with all kinds of meats to buy. I’m sure it’s the same setup.

Regarding Rocky's in Aldersyde (it's not in Okotoks. It's quite close to the PetroCan on hwy 2)
I didn't see a storefront on either of my trips out to see him. It looked like he had a couple of bays in a warehouse condo. When you get there, you call him and he opens the gate to the complex and you drive up to his bay.

Maybe I didn't get to see the front side of the operation, but if I was wanting to purchase retail products from him I would definitely be calling ahead.

Again, very pleased with the product and will be going back again.

He doesn't have a store front but go on his website and grab his number. He'll have everything ready for you when you want to pick up.
His shop in aldersyde is currently just a production facility

What was your mix Matt? Did you use the temperature insensitive cheese from CTR as well?

I did 75 % whitetail and 25 % pork fat back. I have tried the high temp cheese but I much prefer cubing up a bunch of small pieces of cheddar and freezing it. As long as you keep smoker temps reasonable I haven’t had any issues with the cheese melting out. The high temp cheese I used didn’t melt when I would re heat my smokies on the grill and had a bit of a chalky texture

Default Smokie Update

I ended up taking it to Rocky's in Okotoks in early December. Picked it up a couple of weeks ago.

Got the Swiss and Bacon smokies, they are excellent! Highly recommended, everything from taste to packaging I was very impressed with.

7kg of boneless trim, 15 pounds is his min i think. Pork was added, I think at 10% ratio
