Moose tongue recipe
I know I am setting myself up for a razzing here, but has anyone tried cooking a moose tongue? It seems to me that it used to be considered a delicacy, but I could be wrong.

just like cow tongue
into boiling water 10 minutes ... clean then slice at 45 degree 1/2 inch thick ... montreal steak spice on the charcoal grill ,

I remember reading that moose tongue was considered a delicacy.
Recipes for cow tongue should work fine for moose tongue.

I just did some beef and pork tongue, I’d boil for longer than 10 minutes. The cow tongue we boiled for about 1.5-2hrs, the pork tongue was about 45 minutes but it’s a lot smaller. Cool the tongue under water and peel the outside layer off. I enjoy mine better cold with salt and pepper on toast with a with mustard/mayo and onions! Enjoy!

A friend of the better half does beef tongue in the pressure cooker for about an hour, I think. With onions, herbs and spices. It's delicious.

Moose tongue is awesome, even my kids like it.
We boil it as said above then slice it thin. Then an egg wash, Panko, and fried in butter/oil. So good!

Boil for 10 min
Skin the top layer
Put it on a pellet grill with "Meatman's Maui Marinade" (safeway) on it
When im guiding in Yukon, I always save the moose tongue for the FN in Mayo. Its pretty special to them

Had the opportunity to enjoy the delicacy with some Northern natives and my father when I was very young.. I remember the older native man teasing my father to throw away the moose and save the tongue... Was amazing and I wish to this day I knew how they prepared it, I was only 8 at the time.
Hopefully you can find a recipe worthy of this...

I do same as beef tongue.boil 3 hours in 1 tsp salt,a few peppercorns a couple cloves.plunge in cold water take off the skin and pull out the ‘roots’.eat hot or cool and slice for sandwiches and mustard.yum

I saw a cow tongue at wall mart last week $ 49.50 at that price it must be special. I have been eating pork tongue for years. Boil with onions salt and a couple of bay leaves until tender 3-4 hrs peel and slice. Love em hot or cold.
When i sailed the Great Lakes on a texaco tanker as a young man, the cook use to cook cow tongue in the roast pan with onion, spices, and can tomatoes. Roasted for hrs.it was awesome.

Garlic /Cilantro/Cumin marinade then 7 degree Delta to 181 F. Cool slice and charcoal grill-Lay in home made tacos

Yummy.
1 moose tongue
2 bay leaves
500 ml water
6 whole cloves
15 ml salt
1 onion, chopped
1 ml pepper
65 ml chopped celery
Wash tongue and place in a saucepan. Add all ingredients and simmer for 3 hours until tender. Plunge tongue in cold water and remove skin. Strain liquid and pour over tongue. Chill in a bowl. Slice on an angle. Serve 6 people.

Used to eat pickled heart and tongue all the time when growing up on the farm in Saskabush, bust served with mashed potatoes and veggies.

My mom used to make beef tongue using her corned beef recipe. Cooked it up just like the corned beef. Makes me want to try it out again.

My family has been using tongue as long as I can remember.
Like others have said. Boil, cool peal and use in your favorite recipe.
Our choice was pickled.
I've never done the job myself so don't know the recipe but I sure remember eating it.
It was awesome as a sandwich filler.

Hmm
2yrs back some FN friends we know asked if we they could have the nose and tongue if we got a moose. Cutting that nose off even part frozen was weirdly soft but I did and gave it to them. After reading here I think the next moose tongue i am gonna keep.

Just flip the head so the bottom jaw is facing up. Cut between the two bottom jaw bones, skin it off and expose the tongue. Then just cut the tongue out and you will get the whole thing. Great sandwich meat!!

I've cooked moose tongue a few times and loved it...low and slow.
I'd bet the instant pot would do an awesome job on it.
When I used to work in the US quite a bit, a lot of Mexican places served tongue and kidney as a staple for tacos and burritos.
Anyone ever try it in the smoker?

I was wondering about the prep prior to cooking. Did you soak it in salty water? Did you burn the hairs off with a torch? I can imagine that all of the cavities inside of the nose are difficult to clean. Maybe I'll use a compressor/wand after the soaking to blow the mucus out...

Moose's nose is relatively clean inside I've just rinsed in water before pressure cooking in salty water.
