Default CTR refrigeration sausage making course

I was there on Saturday and took the course. I actually went with the expectation that it would basically be “here is our sausage mix and this is how you use it.” The instructor was Aaron from Olds College and he did a fantastic job. Truly went way above and beyond what I expected in such a short class.

He used a couple of pre mixes but we also did some from scratch batches. His explanations were easy and straight forward to understand.

It’s well worth taking this course.

Sorry, I've lost respect for the Olds College meat department, since my last pepperoni I bought there, lacked flavoring

So you’ll write off a whole department based on one sausage?
Tough crowd!

Actually, I drift through there all the time, some good stuff you can't find elsewhere. They also sell casings and spices. I was hoping to get some pork belly, but their bacon is so popular they won't part with it

You can buy it at Just Jacks, in the on campus hotel.

Good to hear. My wife is taking his home butchering course this coming Saturday at the college.
