Default Walleye wings

Anyone using the walleye wings ?
Just learned about this part of normally discarded part of walleye. I have had two after this past weekend... excellent. No more wasting them.

Default Walleye wings

Back in the day when you could keep some fish for the table. We always kept the wings and cheeks. Dip them in egg and milk, coat with shake and bake chicken mix, and into the deep fryer. Hardest part was fighting the kids for them.

Had another walleye wing this afternoon. I am addicted
I will try the way you do filleting as well. In your video looks like it is easier to cut rib cage from the back. We learn all life if we are open minded.
I had no fisherman or hunter in my immediate family so learned the hard way.
So much easier with internet.
