Default How do you make smokies

Want to try making smokies it not sure on everything. Do I just stuff the casings and then they're ready for the BBQ or do I have to smoke them.

You need to mix in a cure and some spices, then smoke them if you want smokies, otherwise they will be fresh sausages. I use spice packages from CTR Refrigeration, they are great tasting and the cure comes in the spice pack.

Andy, I'm making deer smokies today coincidently... I've never done them before but researched on youtube. They will be getting smoked in the Bradley. Will post up pics. AJ

I picked up the jalapeņo smokies mix yesterday from ctr. Was going to make them today. Can't wait to see pics AJ. I think CTR is my new favorite store.

I picked up the smokie mix from Halfords, also Ukranian Garlic, summer sausage. and teriyaki jerky. Going to spend a lot of money at that place.... I want to make some jalapeno cheddar smokies as well, for that I picked up some canned pickled jalapenos, and some Kraft sharp chees slices. I just diced it all up and will mix with the seasoned meat before stuffing.

If you want to create a smokie recipe from scratch without using a complete package mix, IMO the best cure is called GL-55. Harder to find these days, but my family has been in the processing business for many years, and GL-55 sets off many great smoked sausage recipes. Works very well for smoked Brat.....

I usually make my smokies with mixed hot pepper rings. I grind them with the meat and use the pepper juice( 3-5% of meat weight) from the jar reducing salt to 13 grams per kg. Then after I have a good bind I mix in hand cut cheese to about 10-15% of meat weight, Ground coriander to about 5 g per kg.
