Default Smokinq whitefish question

Caught a mess of whitefish.

Just cleaned them and made filets. I wanted to try smoking them, BUT I removed the skin (out of habit).

Am I screwed for smoking them? I just read that you are supposed to leave the skin on. Argh.

The skin helps keep it together but you might be able to get away with poking some holes in foil and smoking them on that. That way some of the juices can drip out.
They might stick to the foil though depending on how oily they are or aren't.

Try placing the fillets on cheese cloth layered up.

We smoke lots of fish each year, filets with no skin. Turns out great for us and have never had a problem. Giver a shot, I think you will be pleased. No need for foil or anything. Just dry your fish well after brining, then let it sit on the smoker rack on the counter for a bit to develop a bit of a skin or tack on the meat before you smoke it.

Thanks kindly folks. I'll give it a whirl. On a side note, what's with posts that are just a bunch of dots (like the one directly above). Is that code for something in internet land?

Ya as above I do lots without skin, the brine firms it up just be carefull when taking it off the racks some will stick usually and it falls apart easily depending on the type of fish.

As far as the smoking goes, I have smoked a lot of fish, it's definitely easier to remove them from the rack with the skin on, but it works either way, and whitefish is firm enough that the skin is not essential to hold it together
