Default oil

What's the best oil to use for frying fish.

just a good old canola.
Now if you had Lard I would say use that.

I like Peanut....but expensive

Next shortening ...Crisco etc.

Yup, lard or shortening is so much better than oil...at least for my uncultured taste buds

Why lard? I know people who swear by it for pie crust but I've not heard it recommended for frying?

taste do you remember McD's deep fried pies? ever had one of their baked ones ? thats why lard is so good ( I like butter too)

Coconut Oil it is the best for cooking alot of things, I use it for everything.

I remember one year at the sportsman show, chef/angler John Berry claimed that lard was the best thing to cook fish in. He was doing a demo there, and the fish tasted pretty darn good to me.

Canola is fine,peanut oil has a higher temp to smoking ratio but costs more,butter burns real easy but if you add some canola oil it raises the smoke threshold.
I once saw a guy use Vaseline to fry a fish,he swore by it.He`s dead now..............

I think lard is by far the best but it is also the hardest on you. Back in the old days my mon even rendered her own lard. There has been or will there ever be anything taste as good as fried or deep fried in lard. Piker

Let me ask you this:

Why do you fry your eggs in the grease left after you cook the bacon?
Have you ever saved pork fat to use in other recipes?



As I said Lard is superior. Just not loved by medical people because it is a saturated fat.

Sureshot, just be carefull. Using TOO MUCH oil may result in a less than desirable outcome that only a BB416 could love.

F/M , I fry eggs in a little olive oil. Once in a great while I will start cabbage in bacon fat. Suate it down and sweat it. add a touch of vinegar and brown sugar, and call it good.

I have also rarely used it for hash browns. I don't object tot he flavor or avoid it for health reasons, I just don't like the way some foods really seem to absorb the fat from bacon.
I also make baked beans with salt pork, or fry some perogies in diced bacon. I have killed lots of my own hogs and rendered the lard out. I even have rendered the fat from Black bears cause I read that the lard was the best for pies. I didn't care for it.

I used canola in my little restaurant, but had to watch the temp as I found it could burn easily in that situation and would affect the flavor of the food.

BTW I served fish and chips that people traveled miles for. Real fish and chips, not that crap you get in Britain.

I look for an oil/shortening that will not impart much flavor to the food I'm deep frying. It also needs to take the heat. Unfortunately I'm also frugal/cheap and those oils are more expensive.

Pan frying, is a different game, because i use less heat.I usually use olive oil and will sometimes finish with butter or some seasoning.

I just have never deep fried with lard.

When I was a young lad, about 7 or 8 we had mutton for supper. I don't remember how it was cooked but there was some fat left in the pan when it cooled. My favorite uncle was home on a pass from the military and had arrived during the night while I was sleeping.
I was pretty excited to see him and surprised him by frying some eggs and hash browns for breakfast. I cooked the eggs in the mutton fat and he gagged them down with a smile. It was years before I realized how bad it must have been and what a hero he was for eating them.

Clarified butter. Butter flavour but it doesnt burn.

The higher burn temp. the better, problem is most of those oils aren't as healthy as say olive oil. A new one that I have been using is grapeseed oil, high burn/ smoke temp. and isn't really that expensive when you buy it at Costo
