Default Good Butcher

Hey guys and girls,

I live up in Fort McMurray and I'm looking for a good butcher to bring my venison too. Does anyone know a butcher down south that does pepperettes that are short and are the dry style(van packed)? Also, I like my summer sausage in a sock, that allows me to let it hang to reach my personnal preference of dryness. Any help would be much appreciated.

Thanks in advance!
