Where to buy pork for sausage Calgary area

2,3 years back I bought a pack(about 60 pound)of frozen pork to mix with my venison sausage. It was great, but forgot the name of the place and I can't find it. I believe it is close by now.
So where do u guys buy pork to mix with ur sausage these days?

You'll pay more than costco but you can buy pure fatback among other things and it will be of significantly higher quality.

I order directly from them and pick it up at the farmers market.

Costco. Case lot of picnics. Case is 3 picnics individually vacuum sleazed. Typically 50-60 lbs in a case. Usually $1.50 a pound give or take.

As in picnics or butts? $1.50 a pound at Costco. $3 is pretty steep

Do you have to ask the meat cutters for the picnics? I haven't seen them out front. I used to buy full to rounds of beef but they quit doing that, pity.

Yes, and if you phone ahead they will have it ready for you. Hardest part is getting somebodies attention in the meat department, but once you grab someone, just ask for a case of picnics and they will set you up.
Nice picnics as well, just cut them up and stuff in grinder, no trimming to do

Upon great advice from a fellow AO member, I went to DNR Sausage supplies to pickup some cure and casings. While I was there, I asked the owner who he suggests is a good supplier of Pork for our sausages.

He suggested a Vietnamese butcher in Symons Valley Square on the corner of Centre St & Tache Ave NW. We have bought our Pork there a few times, and the prices were better than Costco, and the meat was very fresh.

Which Costco do you get your pork from? I was at the Beacon Hill Costco (NW Calgary) about ten days ago and asked at the meat counter about case lots and the person I talked to didn't seem to have a clue.

I believe the place you're talking about is called Trimming Fresh Meats in Thorncliffe. Novan was good to deal with there. Pork from the shop was part of the 2014 pork recall due to the E. Coli issue that was going on back then.

i just picked up some pork from that shop, been there a few times and its great meat and they will grind the pork for you with know extra charge

Get it in Red Deer quite often, have never had any trouble. Calling ahead to butcher shop can speed it up a bit.
Brother has picked it up at Balzac before as well.

Go with MountainTi's suggestion. Best one and DON'T buy pure back fat, you will be very disappointed. Your sausage will be greasy and poor taste. The picnics are the best and if you can get a case for 1.50/lb that's a good price.

MountainTi is steering you in the right direction. We do the same thing in Edmonton. $1.50 a pound, its very good pork for sausage making.

Go to your local butcher/meat shop and ask for pork trim or pork fat. I almost rather pork fat intend of pork meat and fat. I do a 80/20 for pork fat or a 70/30 for pork trim. I've heard also that you can ask Chinese food restaurants for their pork trimmings but that's a little sketchy of you ask me lol

Your heart will thank you as well. If you want greasy and poor taste it's cheaper and easier to just buy a bulk tray of pork breakfast sausage's.

I generally use a mix of 60% red meat to 40% picnics. Even go 50/50. Good flavor and not greasy.

Yes they were always good to deal with. I think their problem back in 2014 originated with the supplier. You can google their name to get the Health Canada details.

Medicine Hat Costco quoted 1.59 a lb for pork shoulders in 3 packs averaging 50-60 lbs .Advised ordering a week in advance.
