Default Bison Burger Fail

Hunting buddy dropped off some Bison Burgers he had made at a popular Calgary Butcher Shop.

Asked me to sample them because they seemed to have a strange texture.

I only had to look at one raw patty to see the issue.

Very high TVP component. Burger actually increased in size as I cooked it.

Buyer Beware

Wonder where the rest of his bison went?

Omega 50 is TVP used as a binder and if so what are the typical components? Reason for asking was a shop suggested I use a binder of dehydrated carrot for moose burgers. Answer was no.

I do not generally use binders. So I am not an expert in their use. Their use is profit driven and that is not my motivation when making meat products

But the principle of carrot binders .
is simple. They will absorb both bound water and added water preventing it from leaving the product as the protein coagulates and shrinks-normally losing and releasing moisture.

Same things bread binders do , but dried carrot can hold much much more water.Over 25x it's weight.

Adds fiber to your sausage so you poop better.

TVP is a normally a MEAT REPLACER. Mimics meat at a lower cost. Increases water holding abilities.
Perfectly legal but something I personally feel should be disclosed to someone having their game processed.

The amount of TVP in the burger I tried was staggering-It Exceeded the amount of Bison in the burger. My friend had no idea the game he brought in was going to be so vegetarian friendly.

It pays to seek clarity when dropping off your game for processing.
Ask questions.

Think I'd blow a gasket if they did that to me, just seems real shady, don't want no dang veggie burger, I rather die of a heart attack than be a vegan! Sorry, never heard of carrots in a burger, that's just disturbing!!!

To my knowledge Burger King uses lots of Soy bean waste product TVP in their burgers. Thats why they taste so bad compared to Wendys or A & W burgers. You can have Alberta beef or Soy bean waste product, Pick your poision, but meat processor should always clear this with hunter first.
