Default Wild game processing?

Wondering what most people pay to have a deer done? I got one done this yr. had some sausage and burgers made. Deer was 118 lbs (64lbs) of trim and they are charging me 525$. Is this normal? Most I have paid before was just over 250$. Any suggestions? Guy tells me he has moose orders there right now for over 2g’s.

I've cut my own deer for quite some time but my moose last year cost 475$ cut wrapped. That was with a bunch of grinding included.

We do our own deer but had a moose done 2yrs back for $600, included burgers and sausage.
Let us know who this is so others can avoid them.

Was it skinned when you brought it in? Was the 64 lbs of trim made into sausage? 118 pounds at $1.00/pound, disposal fee, possibly skinning. 64 pounds of trim plus 20 pounds of pork at $2.00/pound makes 85 pounds of sausage at 3.00/pound. Maybe extra cost for patties, any jerky?

Dang that seems real high. I had an elk cut up last year and it was about 260$, Didn't include any sausage or anything but a significant amount of ground. I did a deer in an afternoon with some family this year. I don't know if I would try an elk on my own but for sure Deer or Antelope I'd do myself again.

Deer was skinned. Had 20lbs made into smokies, 20lbs made into sausage and the rest into burger patties. No jerky no disposal fee.

Ryans has very competitive rates for comparison.

Seems awfully high to me.
What’s the breakdown on the receipt say?
$80 - debone
$2.50/lb - sausage
$3/lb - smokies
$1/lb - burger

I know it seems high. I’ve had deer and moose done at Ryan’s and the moose was cheaper than this deer. But he says that’s the competitive price. I know the wife will be ranting about it on fb...lol. And I won’t be recommending him.

Sorry to hear this, but not surprised. It is these type of stories that cause guys to do it themselves. Really it is just not that difficult, and is much more rewarding than forking out the credit card.

Many sausage recipes use 50/50 with pork, may be the extra cost your not calculating. anything less than 50/50 mix is too dry and not very good IMO.

We do all our own processing so I couldn't compare prices with the OP.

Must be vac packed as well?

When sausage is made it's important to ask how much pork is being added. You pay for the pork AND you pay the same fee to process.

So 20lbs of venison @ $3/lbs made into smokies...if 20lbs of pork is added (just an example) you pay $2/lbs for the pork and $3/lbs to have it made.

$60 + $40 + &60 = $160....now vac pack it at $1/lbs...add $40.

Your 20lbs becomes $200 pretty quick, important to get a fee schedule and ask about cost before you leave it with them.

My last deer was skinned, trimmed, cut and ground in under an hour. Vac packing took another 30 minutes. Food saver bags and paper towel are the only real cost. I've compared the meat I got back from a butcher one year with a deer I did myself and I am easily getting 50% more meat by doing it myself -- and getting my own meat.

I just made 80lbs of sausage this weekend. 50/50 mix with pork fatty trim and the whole thing cost me $175 in supplies for the sausage casing, ground pork fat/trim and the spices. So He's alittle high probably but not that far off considering you have a bunch of smaller batches. More cost effective to get it all made as one item with smaller animals like deer. Especially if your changing flavours.

Seems very high. We had a moose done in Barrhead, 667lbs on the hook (there scales). Had the usual steaks, roasts and burger made up. Final bill was just over $700. That was two years ago, prices can't have gone up that much. Carbon Tax maybe???

$75 cut and wrapped deer------$140 cut and wrapped elk/moose. no saw work, all boned out. Everything else is extra. No Freezer. Drop off in the morning and pick up a bit later or hang around and wait and watch your stuff being processed. That's the game in Elkford at our butchers.
