I've been freezing hides for years. If I'm too late for the spring auction I'll hold my hides till next January.
Dry hides still deteriorate so I freeze fleshed but not dried hides.
As Rob said, eliminate as much air as possible and make sure you roll them skin on skin.
With Beaver, Mink and Muskrat I fill the bag with water, then squeeze out as much water as I can.
With all hides I thaw them, still sealed in the bag, immersed in a bucket of cold water.
Fur can trap frost in the hide and this can lead to spoilage during thawing. Water is a far better thermal conductor so it helps to draw out the frost while keeping the whole hide cool.
As an alternative, Hides can be salted or treated with Borax. However, most tanneries don't like that.
