Default Sausage receipes

It's almost that time to process my game.

I was a chef for a long time but never made my own sausage. I am looking for some ideas or receipes for pepperoni sticks and some other types of sausages I can rock at home. I do have a small smoker and am willing to try almost anything.

If you have deer meat i would mix at least 60% to pork for sausage. I prefer spicy sausage for wild meat, i have made those snakin sticks from the kits you can buy with ground beef 50/50 which turned out great, personally good sausage takes time to perfect so i would try smaller batches until you figure out what you like

I don't make many sausages from game, I prefer pork. The one exception that I do like with game a lot is dry and spicy hot pepperoni. Most recipes will work fine.

There are tons of recipes on this site. Almost any recipe can be converted to wild game if you use a mix deer and pork say a 60/40 or 50/50 ratio. Deer is very lean so you need the fat content.

If you don't already own this book I would highly suggest it. It is considered to be the holy grail of sausage making. Most importantly is has amazing write up on the use cures, processing the meat, smoker times and temps. ect

Of all those ready to mix kits I have tried, the ones sold at Halford's Hides are the only ones that generally get a good reception. Personally I like the honey garlic and summer sausages myself with a little tweeking.
