There are many different "classes" on this, including one held by the ATA and Trapper Gord's Wilderness College:
http://www.albertatrappers.com/trapper-courses.html To my knowledge the mostly teach about humane trapping and handling of animal pelts, but there is more in depth details in the link. They are not exactly cheap, I believe that trapper Gord's is in the $600 range and the ATA price is around $300 but don't quote me on those prices.
