Most of my heart preparations are based on Steven Rinella's (or a meateater contributor's) recipes. I've stuffed game hearts almost like you would a turkey. If you kept the caul fat to wrap it in, that works well to keep it moist.

Hank Shaw also has a ton of good methods. Here is one:

My favorite way to eat heart probably isn't much different than what you described. I trim it and cut it into 1/4" strips which I flour and fry for tacos, fajitas etc. If you're cooking for people who are unsure about eating heart, this one is always a winner.

Like any game meat, don't overcook it. Medium rare works great.

Not just elk, but any heart I cook the same.

Sliced, roll in flower and spices, fry with onions until almost cooked, and pour over a can of mushroom soup.

Sautee for abit, and dive in with both hands!!! Sooooo good!!

Bon Appetite

Default Heart Stew

I recently made a stew out of a moose heart and it was great. An option to frying and makes for a different and enjoyable stew.

Enjoy it however you do it.

Default Anticuchos de corazon

Go to Hank Shaws website and try the anticuchos de Corazon, grilled over charcoal, they are amazing. Made some with deer hearts for a wild game dinner and everyone went back for seconds.

I have made a pickled deer heart before and although I didn't care for it my neighbor thought it was the best. He served it with charcuterie type stuff and was a hit.

I’ve done fried, stewed, slow cooked, stuffed etc and never been happy. Deer flavored rubber.

Last year I ground up heart, neck and some bacon and browned it up with spices and tomato sauce for spaghetti with meat sauce . Absolutely delicious and the woman thought so too.

I have been eating heart and tongue since I was old enough to eat solid food.

I've had them roasted, fried, stuffed. pickled, and roasted over a camp fire.
I love it all.

Wild meat takes different techneques then Beef and Pork. Proper preperation is key to good eating.

Slice it up and make stew...yum. Or if you’re a bit spiritual, hang it in a tree as an offering of thanks to the animal that you killed.
