catinthehat's post about canning cherries in the old "pickling and canning" thread reminded me it's time to make this years rumpot.

It's easy to do, rum sugar and fruit (mostly stone fruit). Google it.

The rum has to have minimum 53% alcohol content to prevent fermentation. So, that means blending some Bacardi 151 rum with regular 40% rum. Keep the fruit submerged. Keep covered to keep the fruit flies out. Will be ready for Christmas. Delicious.

OK. Make a double batch so sampling doesn't deplete it by Christmas.

Dang! Can't get Bacardi 151 in Sask. and the Montana border is closed. I have enough for this year but will have to look into importing from Alberta for next year Something about dangerous goods. Flammable warning on the label!

Just be sure to not let Guido at it unsupervised.

Your post reminded me of when Guido, at 97, was visiting for a few days.

He went into the coldroom and grabbed a half liter jar of cherries.
Sat at the table by himself and ate the whole jar, licking up every last drop of juice.

A few minutes later he is yelling at Baba, "Why can't you make cherries this good?!" on and on.... then starts dancing around the kitchen...

They were overproof Rum cherries.

I did something like this when I was in my late teens. I made something similar I think it was called a compote. Put it in my moms lower cupboards near the back and forgot about it. Well it exploded a few weeks later. What a mess.
So I made another batch, this time with her blessing, it actually turned out very well. We used it as an ice cream topping.

Try to find some Goslings Black Seal 151 proof. It's much darker than Bacardi 151. I bet it would be better. It's readily available here in Edmonton.

I finally got a rumpot! Custom made. I am just waiting for the first berries to be ripe. YUMM!

Nice to see other people enjoy this. I like making some every year and experimenting with different combinations of fruit and different rums.

Incredigirl was inspired by her siblings to have me plant cherry trees, mainly for this purpose.

We have a couple of jars on the go as we speak.
