Default What’s for Easter Supper?

Aside from the religious implications, it’s a long weekend where families gather for many reasons. Does your family gather with a feast? If so what’s on the menu?

I’ve double smoked a ham. That will get oven roasted tomorrow. I’ve also set a 12 lb turkey to brine this morning, that will get a trip in the smoker tomorrow. Sausage meat stuffing in the crock pot, sister is making hot cross buns, mother in law is bringing cabbage rolls, one sister in law is bringing salad, the other sister in law is bringing desert.

What’s on the menu at your place for Easter?

Baked ham, creamy cheesy scalloped potatoes, cabbage rolls, perogies, and Greek salad, pumpkin muffins with cream cheese topping for desert, and maybe a few Easter chocolates

Eater, I mean Easter, means BIG family get together. Everyone brings something so you just never know. Main courses there will be Turkey, Ham and a Prime Rib for sure, rest of the fxins will cover the full gamut from Perogies and Cabbage rolls with mushroom cream sauce to Lasagna, Shawarmas and Kofta. Pretty diverse group of spouses.

We spend the majority of the holidays with the wife’s family at her grandmas place. Every holiday meal is the EXACT same. Right down to how it’s set up and the quantity. There are 7 of us this year for Easter rather than the normal 20ish. Still cooking a 20lb turkey and a huge ham. Menu is turkey, ham, perogies with mushroom sauce, cabbage rolls, buns, fresh veggies and mashed potatoes. For 10yrs I’ve been trying to add a little variety and get shot down. Did a deep fried turkey one year but still had to have an oven roasted turkey. I guess routine is familiar.

Fairly classic meal here.

I'm pre-cooking scalloped potatoes today in the slow cooker and just putting a fresh topping of cheese on tomorrow and crisping them up in the oven.

I'm also pre-cooking/reducing the glaze for the ham right now. 2 cans of coke, 2 cans of pineapple, maple syrup, ginger root peeled and sliced really thin, mustard salt pepper, cloves, allspice, and nutmeg.

The smoked ham gets a no salt, maple sugar and water soaking overnight.

Mother in law is bringing the potato salad (yes, 2 starches!) and the neighbors are bringing the vegetable and an appetizer. They never tell us what exactly they are bringing, and it's always an awesome surprise. Their both great cooks.

My wife is doing 2 lemon and 2 coconut cream pies for dessert today.

Everyone else was just told to bring wine!

We planned it all so tomorrow is very easy and we can spend a lot of time visiting.

I'll be heading to the local golf course for some turkey tomorrow. Just got a cabin and am exploring the local area of Parkland and Yellowhead counties. Monday I'm thinking of tossing a pork roast on. Had a great fish fry at the driving range by Seba yesterday, a pleasant surprise. Today I'll be checking out what Alberta Beach has to offer.

Default ham and turkey in freezer but all the kids moved away

Just the two of us so I am going to try a couple rooster pheasants in the instant pot with potatoes carrots and onions maybe a touch of garlic, pink salt and pepper.
One in Vancouver one in Winnipeg and one in Perth australia I think no company this year for a change.
Pretty sure the wife is trying to rent the neighbors grandkids though it is much more noticeable around holidays with no kids in house

Cooked a 20lb Turkey raised by a friends kids.
Mashed potatoes, broccoli, cheese sauce, gravy, asparagus, home made blue berry pie with whip cream.

Have friends visiting for the weekend from out of town, we fed 10 adults in total. Had a few drinks and had a good time. We try to do this every year.
Happy Easter everyone.

One pot braised mallards, root veg and cabbage with east coast style 'doughboys' and gravy. Haven't decided on dessert yet. My kids got about 80lbs of chocolate this morning, so likely will be related to that
