Default Balzac Meats for Wild Game?

Hi Everyone,

My previous butcher is unfortunately not taking wild game any more (change of ownership I think). So I need a new option for getting sausage made.

I have read some recommendations on here (and I'm open to more) but I was wondering if anyone has used Balzac Meats for wild game sausage. I live in Airdrie so that would be a convenient location, but obviously quality is more important than a short drive. Has anyone on here tried them out for wild game?

I'm looking to get some bear meat turned into maple breakfast sausages. Pretty simple stuff overall I think. Feedback on Balzac or suggestions on where to go?

Can't speak to Balzac Meats but I have been using Gour-Mart in Bowness for years and have never been disappointed. Prices are great and the finished product is amazing.

There's been some gour-mart threads on here that are more the opposite.

I'd recommend Rocky's Sausage Haus

New owners, I wonder what % of the stores business was game ?

Still don't get why more people don't make their own. Even if you have no experience, a sausage making class pays for itself in one season

I tried Balzac a few years back and I was very disappointed! Jerky was VERY average and the sausage pretty much went to waste....

I have found Irricana Meats does a pretty good job and his price is fair. Give him a try, I think you will be happy with it!

That's too bad, the place was hospital clean and their prices were reasonable.

Ryan's Meats is first class for service and I would recommend them.

I got my first deer butchered up and jerky made at butcher shoppe and the next year I was upset when heard they wEnt to new owner and walked away from it. I even sent them an email saying they're missing out and there was no reply.

Last two deer have been taken to Ryan's. No complaints, just like options.

X2. Rocky is the best. Amazing quality. Answers his phone 24/7 during hunting season. Never heard one person complain in a lot of years going to him.

I wouldn't send my worst enemy to Gour-Mart. Unless you like to pay to be disrespected, meat left to spoil, steaks wrapped with bone saw dust and bloodshot meat included in your finished product. Oh and when you address it with the owner, he basically tells you - too bad for you. Never again!

I take everything to Ryan's Meats. fantastic service and turn around time....very reasonable price and the end product has even turned my wife into a moose fan.

I do my own game but I've used Meat Chop at Penhold for many beef, and have been very happy.
I saw a sign there last fall that they were taking game.

Never had any issues with irricana meats, just took out some moose salami they did for me, mmmm

Default Suggestion

I suggest people spread out their trim and try a few guys. That's the best way to test service, quality and flavours. Most places like about 20lbs of trim to make a flavour or possibly flavours. Never hurts to spread it around for a season and then you'll know. If anyone comes to us at Rocky's Sausage Haus we will definitely take care you. Feel free to use my 24/7 hunter's hotline 403-470-2968 from Sep 1-Dec 31. If weather is warm early in season we will get it into the cooler for you asap.

why not do it your self, I butcher all my own meat and make my own sausage not very hard, heard to many story of not getting back your own meat and the butcher keeping the best stuff for himself.

I have been with Gour-Mart for near 40 years. I have NEVER been disappointed with Darrel and his staff.

Most problems you read will stem from hunters bringing in dirty meat or meat covered in hair; and it is refused. Or, asking them to do something that they can't do.

I will return again this year.

Default Thanks Guys...

Thanks for the input. I have dropped it off at Kerik's Meats in Olds. They have made some excellent goose pepperoni for us in the past (best I've had actually) so we'll see how the breakfast sausages turn out.

If they aren't my style I'll try out some of these other guys. Thanks!

There is also Crossfield Meats that process wild game and make sausage. I`ve never used them as we make our own.
