Where has everyone found to be the best place to buy butcher knives for processing your game animals?

There are butcher knives in Kijiji as well....for a good price.

Hi: Cabelas Edmonton North had some good knives for sale. I can't remember the name of them

Another vote for Halfords!

I have been butchering all of my game for many years, IMO all you really need are 2 knives and I use these too for everything including an entire moose or elk.

1. A DICK ERGOGRIP 10 or 12"" Butcher Knife
2. A ZWILLING Twin Master 6" Stiff Boning Knife

Both are very comfortable in the hand. I do not use or need a band saw since I debone all of my meat.

Great minds think alike North40!

I learned to cut our wild game from a Manager of the Meat Department at Edmonton Coop, Don Sikorsky.

Of all that Don was, he was a great butcher! He used the above two knives and I have owned the same since the early 1990's.

Butchers and Packers has them, and just make sure you also pick up a good steel for touch ups, and you will be fine.

I use a small outdoor edge razor for field stuff and a 6" boning knife for everything else, moose, bear, deer. It has never let me down.

Cabela's regularly puts a set of German Henkels yellow handed butcher knives on sale for $99.
Hard to beat that value.

North40Rules has it exactly right. I'm on F Dick only for my set, but these two brands are what pros rely on. I like a semi-stiff blade on the boning knife.

Great thread timing, I was wondering about getting some better knives after cutting up the kids deer last night and sharpening multiple ones over and over.


Been using sub par knives for too long.

I find i use my short fish filleting knife a lot for removing the layers of sinew .

I use victorinox 6" flexible and 6" stiff for all my meat cutting. Have a few pro butchers in the extended family and this is what they suggested..been using them for 10+years nowvand really cant find a complaint. Sharpen up one a year on a whetstone and use a polished steel to hone the edge when needed while using. Lots of other good options suggested here already

Big fan of the victoinox knives. I would suggest getting a 6 or 8” filleting knife as well and the boning knife. Filleting knife is super handy for removing silver skin.

I use the Mundial set from LEM. Got mine at a ranch supply store. Nice and sharp and includes a steel for sharpening.

I'll be honest, I've never done a ton of butchering. I just don't have the room to do it, not the room to house the little bit of equipment that I want/need to do it.
That being said, I did pick up the roll of yellow handle Zwilling knives from Cabela's a few years ago when they were on sale. I just used them today for cutting up some meat. They hold an edge pretty well, at least for I need them to do.
I grew up having that brand in my house. I will not touch anything with the one man on them, they have to have the two men on them. Just a higher grade from what I have read. They aren't the pro kitchen level or pro butcher knives, however they should do the better than average amateur butcher for years.

Thanks guys, I'm a Butcher by trade for 30 years, then went on to be Federal Meat Inspector, I believe I'll be dropping by Hi-Calibre in Calgary to grab what I need to replenish my tools, thanks again guys for all your suggestion's, I have primarily Victorinox, but there are Henkel's in there as well.

There are a lot of real good knives out there. Most common are the lower end Henkles and Victorianox. Others to consider if you are really serious about knives are Mundial, Henkle (with 5 sets of twins etched on the blade (not just one) and Onieda.These entry level offerings are are good, but ...
Check their websites if you want to see thier more than entry level knives...only if your serious.
