Default Pig jerky?

Can you make pig jerky? Specifically with wild boar?

I imagine you could make jerky with any Big game animal?

Hamels meats in Bonnyville makes it. Not to bad either.

Sure you can. Use very lean cuts and make sure you finish it in the oven if your smoker or dehydrator dont get hot enough. Pork needs to reach 170 degrees to kill Trichinosis.

Earl Hagman at Hog Wild Specialties in Mayerthorpe sells it along with his other products (procuitto ham, bacon etc.). We tried the jerky on our last hunt up there and it is superb!!
