This fall I kept the moose liver thinking of an organ meat for the dog's raw food diet. Change of plans. Note, the liver was frozen (in the freezer) within 3 hours of field dressing. I would say it is great for dog consumption but not human (was placed in normal garage bags then frozen). Live in St Albert.
