Smile Grouse recipes

when on a bird hunt today and and got me limited,,nice big breasts,,,how you guys cook the wild bird ?

Always like it when they're big....anyway congrats, did this with ruffies two days ago, turned out great.

1:debone
2: add 4 tbsp coconut oil to pan and melt on low heat, add breasts and enough water to cover, simmer till cooked through.
3:Put meat in glass pan, sprinkle Montreal steak spice, cover with salsa of choice, top with cheese (Swiss or marble work best) bake at 350 till cheese well melted.

Spruce grouse: need to be soaked in milk for 4 hrs prior to cooking, then pat dry, mix butter, BBQ sauce, garlic, onion, in pan, simmer till done.

I like cutting the breasts into tiny bacon size slices then fry them in butter and spice.

Default Sounds good!

Last sunday out at the farm we used a fish fryer (deepfryer), pre soaked/marinated the roughed grouse in chicken broth over night. After our sunday ride we made it back to the farm, and dipped the grouse strips in eggs and milk, dipped them in flour and spices of choice then redipped into the eggs and milk to seal in the spices, fired up the oil and cut some fresh potatoes, deepfried the chicken then the fries. Mmm Mmm Mmm, have tried many different ways to eat the rough grouse and I do believe this takes the cake! In total we did 10.5 breasts and the kids probably ate 4-5 to them selves!

3blade, that sounds delicious.

-Olive oil
-Add diced breast meat
-Garlic
(cook for 5min)
-Red, yellow, green peppers
-Celery
Cover and simmer until peppers are cooked

Lay on top of a bed of rice, mmmmm

Discovered this one recently :
-Debone as mentioned
-Dip in egg and milk
-Then coat with favorite breadcrumbs and spices (I like the seasoned breadcrumbs from the store with a little extra pepper and garlic )
-Fry on medium in half cup vegetable oil and half cup butter until golden
-Lay them in a single layer on a cookie tray
The good part:
Mix the drippings with a can of golden mushroom soup, mix well
Spoon over grouse pieces and bake at 350 for an hour

Tried the regular shake'n bake, but grouse it just too dry to cook this way.
A marinade or sauce is the way to go.

I gotta try yours 3blade.

Shake pieces in bag

Fry in butter until done.

Worked with pheasant too and I usually only cook cold cereal.

Yes, but I did it wrong. The breasts are so small I over did it and they came out like shoe leather

I lightly brown them in a frypan [oil or marg for non stick] then dump mushroom soup over them and simmer long and slow so the meat cooks through slowly without drying out. We then spoon the breasts and soup onto a bed of rice.

What is the purpose of the milk?
The recipes look great btw...just may go out for some grouse now.

I used this from another thread, and modified it, as we were streching 1 grouse to feed 5. Thanks, by the way, to Cal!

Stirred it all up and let it continue to simmer for 1/2 hr. Meantime, made a pot of rice.

Served the sauce over the rice. Everyone loved it. We will be doing this again!

my favs
1 cut gross breast into strips, dip in egg and roll in instant potato flakes and deep fry.
2 cube the breast into 1 inch squares dip in slightly thicker pancake batter than the dirrections on the box and deep fry...... serve with homemade sweet and sour sauce

Kujo the milk acts as a marinade/tenderizer, draws blood out of the meat and most importantly removes the strong flavor associated with spruce grouse. Also works on strong tasting fish or deer/moose.

I did mine like this:
2 cloves garlic
2-3tbsp lemon juice
2-3tbsp olive oil
1/3c fresh chopped herbs (oregano and basil is what I had)
2-3tbsp grainy Dijon


Marinade for 1/2 hr or more.

Broiled in the oven. Was frikkin awesome, and the kids loved it too.
