Different points of view
After I make a kill, my white friends want to know what does it score, my metis and native friends ask is it fat.

I know a few white hunters who could care less about antlers. Know a few natives who are all about the antlers.

Since I don't really make suet or candles, and hang my deer skinned I really have no use for deer fat. Once it's trimmed off it's gone. Now bear fat... One rug is enough but never too much rendered bear fat.
Won't get into the discussion of Metis Vs Whites. Grew up and spent enough time in communities of all types to know that no group is homogeneous. There was just a thread on mentioning how back east people weigh deer rather than measure antlers and I have seen a few elk fed to dogs on a reservation while the antlers were proudly displayed. In today's world, almost no one needs to hunt for food to survive so why a person chooses to harvest
a particular animal is a personal choice (as long as it's legal)
