Default $4 brisket

Just got my new flyer, Co-op grocery has brisket listed at $4/lb.

Just grabbed a few of the pork loins. Brisket was not out or sold out. Good sized pork shoulder was great price too

Hope they have them at the Monterey Coop. Will be stopping by after work tomorrow to grab other things. So this can be on the list.....

Was at Costco near the Edmonton airport on Tuesday and they had AAA brisket for about $9.50/kg. Works out to be about $4.30/lb. Pretty good price for AAA

how is brisket after it has been frozen ? always have bought as needed but too good a deal to pass up

I’ve never had an issue after frozen. I usually buy them at Costco freeze the and then smoke at a later date. Currently have 2 in the freezer for Christmas. Good price as I paid 4.99$ pound for ours here in Montana.

I always freeze mine and they are fine. The last 2 I bought I tried the wet ageing process. Haven’t cooked them yet but it’s supposed to help with the flavour and tenderness. If the brisket has a packed on date. Count 45 days after that. Leave it in the fridge till day 45 and either cook it or freeze it. As long as the cryovac is in tact it can stay in a fridge at a constant temp (32-34 degrees F) for up to 60 days.

What about refreezing after grinding? I have a frozen brisket I wanted to grind with some pork for burger and sausages.

I was thinking I should have put it through the grinder before freezing it.

if anybody's looking Co-op in Lloyd had lots left this morning

I separate the point for smoking, use the flat for corned beef and pastrami

That’s about 5.45/lb.

Certainly not $4/lb, but not a bad price.

All this talk has me jonesing for some smoked meat!

I typically cube up the meat then put in freezer for a few hours before grinding as the grind comes out clean (and not gluey) which makes for better sausage or grind.

The colder the better for grind, if you can get it cubed from a frozen block.
