A neighbor lady was dragging one around at the MV Canada day barbecue. Kidded her about coming from her garden, but never had the chance to ask what it was, pretty impressive though.

A species of Tragopogon, commonly called Salsifies.
IIRC, an edible plant brought over from the old world.
For greens, try the young leaves, stalk and even flower heads.
Was mostly cultivated for the root, which is similar to Parsnips.

It's wild Goat's Beard. An imported weed. But not a major problem.
It grows mostly on dry, south facing slopes and is not common. Although it can form extensive patches in suitable habitat.

Definitely a Tragopogon with more than one common name.
Goat's Beard/Salsifies, same thing.
It was imported as a food stock. Still fairly common in Eastern European, Mediterranean and Middle East vegetable gardens.

Anyone know what time of year is best to dig up the root to eat? I've seen a bunch growing along a trail I hike.

We had milkweed back in Ontario. Favorite for the monarch butterflies. Interesting seed pod.
The stem of the Salsify leaks creamy fluid as well when broken I believe.
