Default Grayling

Hope to catch some Grayling in the next couple of weeks up in the Yukon. What is the best way to prepare them to eat?
Heck- I don't even know, do you gut them or fillet them- what is best?
I hear that they are very tasty- is that true?
Would appreciate any advice.

Camp fire grayling:

-One Grayling, Season salt, Splash of beer, Foil

-The meat of the grayling begans to break down very quickly , so the best way to eat it is to cook it as soon as you catch it. Clean your catch and sprinkle the inside with season salt. Lay the fish on some foil and pour on a little beer. Wrap the fish and place it in the coals of your camp fire. It only takes 15-20 minutes before the is done.

Seriously though, Grayling are a thing of beauty, and you should take a picture and let them go. Pffffffffffffffft........... serve them up Crispaaaaaay
