Hot sauce
This is my test batch. If it works out I might start making some with my Carolina Reapers.
For this batch I used some Hot And Heavy peppers that I grew and dried last year. Some hot peppers a coworker gave me a couple of months ago, that are half dried out. My Cayenne peppers that I grew this year. Two heads of garlic, and a red bell pepper.
Mixed up a salt water brine. And I'll let it ferment for a week or two.
I did this last night and noticed this morning that it's starting to bubble already.

Yes it does give it that tang. It raises the acidity (ph) which naturally preserves it. So it lasts for months in the fridge. And if you get your ph to at least 4.6, then it is shelf stable. Like ketchup
Adding vinegar does something similar, but with different flavour.
When I'm done I'll check my ph, and possibly adjust with vinegar. So it shelf stable.
I'll probably also boil it when I'm done to stop the fermentation. Which would keep changing the flavour.

Today is hot sauce bottling day.
I realized that we didn't have a food processor anymore, so we made a trip to Canadian Tire where they had a Ninja set up for sale. I strained out the brine and blended the chunks into a pulp. Added a cup of brine and a cup of vinegar and blended.
Then I strained everything, to bottle.
I may keep the dried out paste to dehydrate into a spicy seasoning.
After supper I'll bottle the liquid.
It's tangy, and spicy. I was going to boil the concoction to stop fermentation. But decided not to at the last minute. So the flavour might keep developing slowly.

So I ended up getting 10, 2oz bottles full. Plus almost a half bottle. It's almost watery like a Frank's or similar sauce.
I'm super happy with how it turned out. Sometime throughout the week I'll try dehydrating the pulp for homemade seasoning.
Now I need to think up a name.
I was thinking BYOB
Burn ye ol butthole
Any other ideas?
I'll have to test it out tomorrow with supper.

I did the same kind of thing with ghost peppers. The guys who were using it daily loved it but soon complained about uretheral burning

Those are really good names. I like the savage fire sauce.
Umm heavy duty mechanic for 15 years. Bodyman for 20 years before that.
