It honestly has very little to do with matching the hatch in my opinion. Tie some smaller gotchas in the 12-6 range for the schooling bonefish that are accsesable if you're DIY fishing off the beaches and some bigger stuff up to size 2 for the bigger solo fish you will run into. 9/10 times if you can lead a bonefish without spooking it, they will eat just about any shrimp pattern you throw at them out in Belize.
When I first started going down there I tied WAY too many flies, the bonefish do very little damage to the flies and they last a long time without getting too janky. I typically tie 3 or 4 of each specific pattern and it easily lasts me the entire winter i'm down there.
The permit are an entirely different story, most of the permit i've every caught i've had to throw numerous patterns at them before they actually take a bite. If you're out with guides, just use their super secret patterns, they tend to always work much better than even the prettiest crabs I can tie hahaha.
