I've just been using internet recipes, I prefer teriyaki, so I use lots of it. My problem is when to stop the drying progress, it seems to end up crumbly.

If you are having trouble with the jerky crumbling double grind it to get the particle size smaller and have it bind better. Grind as normal then get it cold nearly frozen (or even frozen) then grind it again. Will help it hold together without resorting to adding a binder.

Seems odd. Do you add water to the mix? I've made a ton of ground meat jerky and if anything the more I dry it the tougher and more solid it becomes. I do all ground jerky in a dehydrator though. Always just one grind. I've even bought burger from the store and had the same excellent results.

Seems really odd it goes crumbly. Maybe you are doing it too hot? I make pieces with my hands with the leftover from my jerky gun and it never falls apart. Do you mix it well? Maybe not mixing enough.
