Now that's cool, not sure if I could get it to 8 mins without gaffing or slicing a part of my body off but there are some neat cuts to learn for sure...

Whats really cool about this video is he does not need to sharpen his knife a dozen times. After all that cutting he still has an edge to trim up that loin.

That guy is so fast it is absurd, I'd still be working on the 1st quarter lol. I may have to get a meat hook as that seems like it would save the fingers a lot. My fingers always get rather cold taking care of a deer usually as often times the deer is semi-frozen. Hopefully that would take a good chunk of time off my processing time.

I was going to say the same thing. Sure shows how buying good steel and knowing how to sharpen it properly can make a job like this easier. Something I must consider before next season.

What a great video, nice to see a guy that is great at what he does for a living, even with the impressive speed the bones are super cleaned, I'm certainly not anywhere near that speed, maybe an hour on my best day.

x2 That meat hook is a great idea... keeps the fingers away from the knife, a guy could realy speed up, and more time to drink. The guy is good.
