My wife and I are headed down the red deer river on Monday for six nights. We won't have an outrigger, but we're in a wide bodied canoe. The outriggers are good if you have dogs/kids/ etc. It also helps if you want to stand and fish...
Your wife might feel a little more comfortable if she sat lower in the canoe, with the most stable being in a kneeling position. I use foam kneepads, without the straps on. Then I take one of those swimming 'floating noodles' and put that just above the back of my heel and use that as a cushion for my rear end. Having either no shoes, or very flexible shoes helps. This is a very stable and comfortable position.
It does take some getting used to. I nearly dumped my father in law into the drink getting into the canoe on may long weekend. That had me pretty scared!
The lower in the canoe, the more stable you'll feel. Hope all goes well for you! It's all about the centre of gravity.
