Well ...i didn't have a spare 27 mins in my day to watch a video until i starting watching this craftsman weave his magic. Very cool. Thanks for posting Sundance

Watching wicked tuna I saw a fish that came in “burnt”.

Looked it up out of interest.

The tuna once killed still has muscles firing. Because they are warm blooded the heat from the muscles can literally cook the meat.

So what they do it kill it as fast a possible after hooking it. Then bleed it. Then once aboard clean out the guts and gills. Then run a rod down the inside of the spinal cord to stop all muscle signals. Then pack the body and gill area with slurry ice or wet ice and rush back to sale point.

I wonder how much it costs for a plate ?

Last time I had bluefin was when 3 Calgary restaurants pitched in and bought a large one for $125,000. Another for $25,000

I paid $5/piece back then.

It was good, but to me hardly worth the difference of ahi.

Most expensive sushi tuna I had once was dog toothed tuna. It said market price on the menu and I didn’t check. It turned out to be over $20 US / piece. Ops.
