Default Smokies

Has anyone made smokies without finishing them in a smoker? If so how were they? I would imagine that if I'm not going to smoke them then I wouldn't add cure as well? Thanks guys

Making a fresh sausage unsmoked is fine. No you don't need cure.

I did exactly that. Cold smoked sausage (with cure) for a few hours then finished in a "sous vide" style water bath till internal was 150. Came out quite good, but it was my first attempt at homemade sausage so I will likely try finishing in the smoker next time for comparison.

Maybe you could split your batch and try both ways? Be sure to let us know what you think!
