Default Breakfast sausage

Hey all, doing a weekend of sausage on sat.
Have my usual ones that I'm going with.
The bfast recipe that I've made the last bunch of times is a sage & Ginger.
My family likes but me..not so much.
I find it too strong.
Does anyone have a basic standard issue recipe they might share?
If not I may buy a mix from CTR and try that.

being quit lazy I just use a GOOD poultry seasoning and boost it with bit cayenne.

I get my breakfast sausage from CO-OP. Boil them, then brown them and then into the freezer, after they cool of course.

Default breakfast sausage

I love American-style sausage, such as Jimmy Dean. In the fall, I used this recipe for about 20kg of mixed pork and venison sausage and another 10kg of pork only. My family gobbled it up. I made frozen patties that I cooked thawed and out of the freezer, and rings in pork casings that got smoked in my attempt to copy the Harvest farmer sausage you can buy at Costco.
16 oz ground pork
1 tsp salt
1/2tsp dried parsley
1/4 tsp dried rubbed sage
1/4 tsp ground black pepper
1/4 tsp dried thyme
1/4 tsp crushed red pepper
1/4 tsp ground coriander

Don't skimp on pork fat.

Default Breakfast Sausage

I buy a very nice maple breakfast sausage mix from Edmonton Butchers and Packers. A big hit with our family and neighbours.

CTR sells a High Caliber brand “Beef n Onion” seasoning unit that is quite nice. A friend gave me a sample to try where he added some finely chopped leeks to it. Wow, it was really good. Dad (who is 74) and I are making more in a couple of weeks.

I might suggest that you could add some finely chopped red pepper to this as well.

Maple Breakfast sausage:
3 lbs ground pork butt or shoulder (20% fat minimum)
1 Tbsp salt (non iodized)
Half cup of finely diced onion
2 tsp ground dried sage
1 tsp finely ground black pepper
2-3 oz maple syrup (real stuff, not pancake syrup)
2 Tbsp skim milk powder

Can either stuff into casings or make into sausage patties.

1 ts salt
3/4 ts pepper
1/2 ts dried sage

1/8 ts nutmeg

Our Favorite:

Maple Breakfast Sausage Recipe

10 lbs venison
8 lbs fatty pork
2 lbs Maple Cured Bacon
4 tablespoons dried thyme
4 tablespoons dried marjoram
4 tablespoons kosher salt
2 - 3 tablespoons rubbed sage
8 tablespoons fine ground black pepper
1 cup ice water
2 cups real maple syrup

1. Grind the venison and pork through the Medium plate of your grinder.
2. Grind the bacon through the Fine plate of your grinder (better mixing)
2. Combine the spices in a small container and mix with the ice water – let sit long enough to dissolve the salt, then add the maple syrup and mix well again.
3. Pour the spice, water, and syrup combination into the ground meat and mix thoroughly.
4. Once the sausage is fully mixed, stuff it immediately into 22 - 24 mm casings.

The LEM (Backwoods) breakfast sausage seasoning is good. I have used it a few times now. Favorite is still the Cajun.
