pickled sausage
its been awhile since ive been on the forum so i thought i might reminisce and bring up an old subject ,and thats pickled sausage in the calgary area.cowley has awesome stuff but its a drive.anyone got some closer leads?i can make my own but im lazy ,there i said it ,dont judge me lol .tia

i work in pincher and stay in sparwood during the week, call your cowley supplier set it up ill pick up and meet on way home on fridays on my way back to airdrie..ALSO MY BUDDY MAKES JARS OF PICKLED HALIPINO SASAUGE AND EGG THAT HE SELLS FOR 20/ JAR. I BUY THEM REGULARLY..

After I found it pretty darn tough to buy, my wife started making it. She experimented with a few different recipes. She has it nailed now and it sure is good. It doesn't take long to do either.

Just bumped the pickling season thread. Hunterdave has a recipe on there for pickled sausage. I used garlic sausage and it sure was good.
Sorry I don't know how to post links. Lol damn confusers anyway.

This is the recipe that my Wife uses. Wieners or sausage, it doesn't matter.
SPICY PICKLED HOT DOGS
A clean wide mouth jar (I used a mayonnaise jar)
1 or 2 packs of Hot Dogs depending on size
(Buy the cheap ones they are the best for this recipe)
1 teaspoon pickling spice
2 teaspoons hot pepper flakes
1 teaspoon Italian seasoning
1 teaspoon dried minced garlic
1/2 teaspoon salt
1 1/4 cups vinegar
3/4 cup water
Jalapeno, Habaneras or other hot peppers, sliced lengthwise and several cloves of fresh Garlic
Pour the vinegar and water into a medium sized saucepan, add spices, bring to a boil, reduce heat and simmer for about 5 to 10 minutes while you are packing the jar.
Stand the hot dogs up in a wide mouth jar, tightly packing the jar, filling open spaces with the peppers

This recipe is GOLD I haven't tried eating it..but I make it for my Dad every couple months and just did 2 jars today..He loves them Great share Hunter Dave

We find smokies work great. Look for product that says precooked on the package. Ham sticks are also very good. Just try different stuff until you find what you like best.

I tried a different recipe(?) that I figured that I'd post for you fellas. I saved the juice from a large jar of hot banana peppers and used it to pickle the wieners.
Pack a jar loosely with wieners, boil the juice and pour in the jar......then wait a few days. Easy, peasy! The wieners had a very nice spicy/hot, pickled flavour.
I tried it with eggs but it didn't go together as well as with wieners.

Another use for leftover pickle brine is an easy coleslaw dressing...
1/3 cup mayo
2-3 tablespoons pickle brine
that makes enough for a couple servings of slaw.
I used the brine from a jar of spicy pickled carrots that I was given, it was very tasty and you can't get easier than that.

Dave do you take the seeds out of the jalapenos? Also how long do you soak them for the best flavor?
I remember a time ago I'd go to a pub down south and they would have the big bright, red, pickled sausages and pickled eggs and pigs feet on the bar.. I miss those sausages and will give your recipe a try. Thanks for sharing.
