Yes they are.
It was male WT fawn and both hind quarters were marinated for 10 days then deboned , formed / tied, dried overnight and smoked to make delicious hams.
Fresh tenderloin was used for Steak Tartare.

I never thought I would do all this but with help of places like http://www.meatsandsausages.com/ I feel like hunting has more to it than just kill and it is healthy hobby for me and my family.
