Default Tried the new smoker on some brisket today

For those of us that are smoking here is some porn. Made on a stick burner

I tried something new had it on for about 9ish hours to bring it to 165 wrapped it and held it in the oven at 180 with a sheet pan full of water under it for 12 hours.Lets me go to bed and then get up the next day,getting to old for the 16+ hour smokes. I got an Oklahoma Joe's highlander on clearance at Lowes for 500 bucks and 100 bucks in mods and I am set

Thanks and IMHO after getting to play with the traggers and the like they just don't get it quite right even more so with brisket, jack of all master of none. Or I just need a reason to have more grills/smokers

You sure did get some bark on that beef!!!!
I did my first a few weeks ago on my Traeger Ironwood and it turned out fantastic. Not as much bark as you have there but everyone looked quite full at my house !!!! A lot of the bark mentioned comes from the quantity of rubs, temps, position on grill etc.
