Default Black garlic

So awhile ago I was at the millerville market and chatting with a feller who raises garlic. The conversation turned to elk steak and he said “hi have to try fermented garlic”. So I did. Wow, what a great thing on steak, somewhat of a balsamic vinegar flavour. Worth a try next time you crank up the bbq.

Interesting.
Tell me more about this, Did you ferment it yourself or can you buy it?

Now if a person could only find good strong garlic. The garlic my grandmother grew was way stronger in flavor than any bought in the store. She probably brought that strain of garlic from the old country with her.

A person could try smoking some cloves lightly before fermenting too.

I saw a recipe recently that sounds interesting on this website. Chocolate mousse with Black Garlic strawberries. Some great garlic recipes. How about a black garlic beer?

I didn’t ferment it but it would be worth it as it’s frighten expensive.

There are local buyers who grow fantasticngarlic and I really do try and avoid the Chinese stuff. The Italian supermarket on Southland drive in Calgary has good garlic (seasonally) and it’s worth every penny.

You can make it yourself. Takes quite a bit of time and needs to be kept warm but if you have a dehydrator with a heating element it should be easy enough to do.

After searching around a bit I see there is two ways of making fermented garlic

1) mason jar of garlic cloves in salted water with a fermentation lock

2) whole garlic in a rice cooker on warm for 21 days or so

Sounds interesting I think I'll try both

Hi everyone!

I agree nothing is better then black garlic and steak. I like to mix the black garlic into the butter then coat it overnight, BBQ next day then a layer of black garlic butter on top that melts in leaving the garlic that adds such a dynamic flavour!
