Years ago I went into Gourmart and the fellow told me he was going mix my meat with another persons because I didn't have enough weight. I looked at the hair infested pile that was to be mixed with mine, and needless to say I left and went somewhere else.
Last year I went to Ryan's Meats and had a small amount of the first deer made into Jalapeno-Cheddar. The contents were good but the casing was 'plasticky'. I then went to CTR on 17th Ave SE in Calgary where I bought my own grinder and stuffer. The staff were very helpful and recommended natural casings. Using natural casings and recipes from "TheSpicySausage.com" we have not made a bad batch!
In any event, making your own sausage is easy, cheaper and much more satisfying, I would highly recommend you do!!!
