Default Awesome!

Why do they jump on the wolves once once caught? Do they strangle them?

Kneel on the chest, suffocates the wolf.

Maybe they are taking the wolf alive. The pics look like a set up. How'd they get the wolf to run toward the camera? On more than one occasion?
It's a cool video though.

Cool video, thanks for posting.
To answer the questions.
They did take some wolves alive - to keep in captivity.
We don't know how many camera setups it took to take those short clips, so I don't think this is a setup.
When the scent hounds chase the wolf and bark (bay?) the skill of the guy(s) on a horse holding the sight hounds is to position himself close to the exit of the wolf into the open space, where the sight hounds (such as borzoi) are released, catch and sometimes kill the wolf.
They did also hunt with scent hounds only.

Default killing method.........

Trappers and fox farms used to hold them down and use their knee to depress the lungs to suffocate the fox as to not put a hole in the hide............Harold
