Hi,
We've just done 40 kg of sausage. Goose and snowgoose meat were used.
We didn't mixed meat and it taste very very very good.
50% bird,30% fat, 20% pork. We add 10% of salt and if we do a cheddar/bacon, we add 30% of the total weight of cheddar and bacon.
The sausages are awesome!
