Default Cure in smoking salmon

Getting ready to smoke some salmon here. Brown sugar and kosher salt dry pack. Couple of recipes cal for the addition of cure, others don't.

I've never used cure when smoking salmon, but I think a lot would depend on whether you are cold smoking or hot smoking.

I only use brown sugar and salt dry for about 24 hours. No cure.

no cure here either. smoked salmon usually doesn't stay around long enough to require cure.

I usually use Salt, Brown sugar, and honey or maple syrup.

Coarse black pepper, pickling salt and brown sugar. Let sit in fridge over night; take out and dry with paper towel. Set aside for a few hours until it starts to form a thin dry skin. Comes out perfect every time.
