Default Calabrese sausage

I am making dry sausage using the Umai salumi kits. I want to try making a Calabrese dry sausage. It is spicy. I have tried YouTube to no avail. Anyone out there have a tried and true Calabrese dry sausage recipe they are willing to reveal. Thanks. BEL

We make a version very similar to the the above (vodka instead of vermouth) but put a light smoke on it and add some garlic powder and a little splash of red wine (a Shiraz works nice). It ends up a little more moist, but you are putting it on dry smoke after.

Turns out really nice actually. Worth trying out on a small batch.

You mean " Soppressata "The really good home made stuff?

I have been married into the Calabrese family for 36 years!

Very nice. Thanks very much. Will give it a try. Soppressata seems to be some sort of generic term for various salamis. BEL
