Default Question for an instrument tech, are thermocouples interchangeable?

I want to move the K type thermocouple temperature sensor in my smoker, the current location is too close to the heat source and burning chips it’s making the temperature readings inaccurate.
My question is can I buy any K type sensor within the temperature range?
Lots for sale on Amazon and Ebay not really much of a description for application.

My K type sensor has a range of 0-300C

The closest I can find is 0-400C would this work?

It's a only a $5 part with 45 day shipping from China I could give it a try.

It will be more accurate up to the 300 degrees and a little less accurate above that. But it will still work just fine.

Thermocouples aren't really calibrated as such but have a fairly large range of use.
