Jack Crevalle is considered a trash fish in Florida. I tried to cook one just to see what it was like but after filleting it I could already tell it was a very poor decision and didn't even bother trying to cook it. Almost all dark oily meat and lots of bones and also tough sinew like fibers.
Reminded me of the time I tried to smoke goldeye. Yet another fish I won't bother to ever try again(maybe some professionally smoked stuff if I see it just to see how bad mine turned out lol).

I can never get enough of salmon and tuna sashimi. If I ever had the chance of choosing my last meal on Earth before dying, those two will definitely be in it.
Fatty tuna is my most favorite part. Anyone who's in Calgary should check out Roku Sushi and Sushi Bar Zipang. The two best sushi restaurants (that's not AYCE buffet) in town in my opinion! It will be $$$ but it's so damn good. Haven't been to Zipang lately but I know Roku occasionally have the good fatty tuna from Japan in every now and then. Call and ask for stock before going in if interested in that.
Otherwise you can't go wrong with a goooood salmon steak!

I forgot- when I was fishing the dock at Waikiki I caught Laka or Unicorn fish, which the restaurant on top of Wolfgang Puck's did up for us. He cut it up, breaded and deep fried with a very nice dill sauce. It was just amazing. I would put it and broomtail right up top of the list. Same guy did the broomtail for us, caught at the research station.

Those were the only fish that were biting that time in Mexico so we got the restaurant at the resort to cook it up. I'll just say it's not Mahi Mahi. Lol

This thread made me hungry for seafood, so tonite I am frying some quillback rock fish and a bucket of shrimp in butter with fried garlic. I understand 'delicate' fish now. It is just amazing!

For old school pan fry coated with dill pickle chips/egg - walleye and perch
For fish sandwiches - mahi mahi
For soup or fondue - basa (yes i know the raising/quality is bad) haha
For oven/bbq a tasty atlantic salmon with either tons of onions or maple syrup
Best sashimi i ever had was fresh Yellow tail as well, although a good red ahi tuna is hard to beat.

From fresh water fish - burbot, perch and walleye in no particular order.
From the sea/ocean nothing beats swordfish for me - just unbelievable taste.

I tend to prefer white flesh so I like walleye and perch the best.
Pike isn't half bad if it's out of cold water but late season, shallow water pike tends to be 'mushy' and I don't like the flavor. If it's flesh is orange, I won't touch it. Mostly I just hate deboning them and working around the slime.....LOL
My wife is from the US and spent most of her life living in the south and she introduced me to catfish. The way she breads it and fries it is delicious along with a side of hush puppies........MMMMmmmm
I don't mind salmon or trout if they're small. But once they start getting bigger they get a fatty taste I don't care for and won't eat them unless they're properly smoked.
I won't eat raw fish after seeing a microscopic view of raw fish. Too many little worms waving around. Call me squeamish but worms is bait, not food.......LOL

Check out an older story in the news about a guy in Calgary who made his own sushi from store-bought salmon...will turn you off raw fish forever!

Though I like Red Snapper immensely, SALMON... all the way!
If you disagree, then try eating it like crab.... make up a bucket of salted garlic butter... HOT Salmon, not warm, not cool, Hot, and dunk in the garlic butter and gorge!!!
It's almost better than crab cuz you don't get hungry eating it!
Favorite is a nice size hunk of a nice big 25-30 lb red chinook salmon, blackened and cooked to perfection. Soooo good that the garlic butter is only optional... mind you I tend to always dunk the back if the garlic butter pot is available.
