Fall bear all the way, they are in peak shape. A spring bear hasn't drank water all winter and has lost all it's reserves and is in terrible poor shape come spring... yuk.
What do you do special? You cook the living heck out of it everytime so it doesn't kill you.
Fall bear is delicious, little fall bears in the private land even better.
