You already know that the difference between the JS and the newer Mauser
IS is the move from .318 on the older JS to .323 bullets on the newer Mauser version. Outside of that there is very little difference, the case dimensions are the same except for the neck, between the two cartridges. With respect to loads, it is going to depend a lot on exactly which gun you are loading for. If you have an original Gewehr, load down, if it is in a 96 or 98 then the higher pressure loads should be fine in a gun that is in good condition. Hornady publishes loads with pressure data for the 8x57 IS .323, so it is just a matter of staying within your pressure limits for the rifle you have.
