This is the one we use for round & sirloin roasts.
Our roast are 3-4lbs. We usually do 2 for the left overs for soups etc.
The last two rounds roasts we did turned out amazing.
I used Lumberjack Charhickory pellets in my GMG.
Follow it to a T except I use Weatherford spice & High Mountain Venison rub and a little bit of thyme.

Thanks-will use the technique for cooking-Drip Pan will have Dried crushed Morels- Homemade Beef Stock and Fresh Rosemary-Will make a Mushroom Gravy at the end while I reverse sear.

Rub is Paprika-Onion Powder, Garlic Powder-White and Black Pepper.Dried Thyme and Dried Rosemary dissolved in hot water to make a paste-Roast was dry brined overnight.
