Default Charcoal BBQ

I just bought a portable charcoal BBQ. Whats the best way too cook steaks. And what kind of wood chips are the best?

There is only one way to ruin good beef and that is to overcook it....or at least thats what my Dad always said.

Good choice by the way...I miss charcoal BBQ it always tasted the best.
I like hickory or applewood on mine. I also like to marinade beef in Kraft Zesty Italian dressing and some Sherry or So Co overnight... but I'm a garlic hound.
If i think its going to be tough I use a bit of Coke or Pepsi with Cherry Whiskey to help tenderize.

A bit off track here but pork loin sprinkled with garlic salt a few pieces of rosemary or sage and smeared with ginger preserves... is a real treat.
