You put it on pancakes. I seen an episode if dragons den where the 2 lads from nfld were trying to market all kinds of birch products. They didn't get any money

And...you can make birch beer.
It is sooooo yummy...like rootbeer only better for you and...if you do it right it can pack a wallop!

Trapper Andrew (thewildnorth on youtube) has a video called "Wild Birch Syrup", got me curious to try it out for myself now (and the beer).

Sobeys sometimes sells it in individual cans.
Non ETOH of course but still tasty.
Looks like cream soda and tastes like a smoother form of rootbeer.

Great stuff....but takes 10x more birch sap than maple. Not quite as sweet (better imo) but it ain't "easy" to make or cheap.
There is some French guys that get together up here and do it. Not sure how much they get but it's a pile of work and time.

I always thought it was 40:1 for Maple syrup and 80:1 for Birch, anyone know for sure?
I don't make syrup but instead reduce birch sap by 1/2 only then freeze it in ice cubes to drink with a fine scotch.

Some years ago a bunch of us tapped several birch trees. Got a 45 gal. Barrel of sap. Rendered it down to 1/2 cup of the most god awful tasting crap.
Mind you they were Alberta birch trees.
Maybe the trees in QC are sweeter.
